Wine pairing at the Auerhahn: Baden wines with the evening menu

With the evening menu at Restaurant Auerhahn a matching wine pairing can be chosen on request. One focus of the wine list is German wines – including many from Baden and the Kaiserstuhl.

The glass follows the course of that evening in the restaurant at Lake Schluchsee. There is no pairing that repeats the same four bottles all year.

Wines from Baden and the Kaiserstuhl

Baden is the southern wine region, the Kaiserstuhl its warmest stretch. That is why the list at the Auerhahn includes many Baden wines, often Pinot Blanc, Pinot Gris and Chardonnay, alongside other German bottles. These are the varieties that work with vegetables, fish and a richer course without covering the plate.

Which bottle is open on a given evening is not published as a fixed list online. The list has a clear focus. The pairing for the menu is chosen by the team from what fits the courses of that day.

Why the wine pairing changes with the menu

The evening menu at Restaurant Auerhahn is recomposed with the season. There is a classic sequence and a vegetarian one. When the evening begins at 6.30 pm, the published menu price is €126. The courses themselves change.

That is why the pairing changes with them. First comes the menu, then the wine: a glass or a small sequence across the courses. A Pinot Blanc that fits the vegetables on Tuesday need not fit the fish on Friday. The water charge of €6 is added independently of the wine. The website does not publish a fixed price for the pairing. The team names it with the reservation.

Before the menu there is often a glass of its own at the bar. The house Secco Soho is that opening, not the description of the wine pairing.

Wine bar and sommelier at the Auerhahn

Anyone who wants to taste the wines does not first have to order the whole menu. At the wine bar the sommelier advises, and single glasses can be drunk there before or instead of a pairing across all courses. Hotel guests and external guests are welcome in the evening, external guests by reservation.

A short enquiry is enough: classic or vegetarian sequence, one glass or several courses, more white, red or little alcohol. Then the team can name the bottles that are actually open that evening.

Anyone looking only for a glass without a set menu is better there or at the bar than at the fine-dining table.
